Variety Rice Podi

Presenting you the simple mixture/powder that helps to resolve the lunchbox recipe madness!

Dry roast 1/4 cup of channa dhal (Kadalai Parupu) in a  kadai. Maintain low flame. Roast till the color changes to medium brown and crispy. Keep it aside. Now roast dry chillies (6-7) in the same kadai. Don’t let them turn black. Let it cool for few mins.

Put them in a mixer and grind to a coarse-to-fine powder. Done!

You can grind some extra quantity and store in an airtight container so that the flavour remains fresh.

How does it work

This powder goes well with Brinjal,Capsicum and Carrot. These vegetables get cooked in no time making the task easier.

Let me give you the recipe for one and its the same for the rest.

  1. Cut brinjal into medium-sized pieces.
  2. In a kadai, heat oil and add mustard seeds,urad dhal and few curry leaves and fry them.
  3. You can add onions but usually I don’t, as it tastes good plain. And it saves some considerable minutes.
  4. Add the brinjal pieces, required amount of turmeric powder and salt.
  5. Saute until brinjal gets cooked. Dont add water and also don’t overcook, as they will go mushy when you mix with plain rice. Tip: Use a kadai with thicker base and keep it in low flame so that, you don’t have to be at the stove for few minutes and use that time in other chores.
  6. Now add the cooked brinjal, add required salt and add the powder that we prepared above (channa dhal & dry chillies) in portions to the cooked plain rice. Mix well until everything blends well. Tip: Adding few drops of Gingely oil while mixing any variety rice will make the rice stay softer for a long time and will avoid going drier when you pack it for lunch.
  7. Ready to serve/pack !
  8. When you use capsicum, don’t slice; cut them into medium-sized cubes.
  9. Grate and use the carrots.

If you have the powder ready, then you just need one of these vegetables and cooked rice so that your mornings can be less-stressful and your lunches can be not-so-boring kind!
