Chocolate Pumpkin Muffins

When people were cooking for Onam Sadya with pumpkin, I chose to make these Chocolate Pumpkin Muffins. Though I was so skeptical when I read the recipe on Saffrontrail’s blog about adding pumpkin to muffins, I decided to give it a try.

I used two eggs. I didn’t have riped bananas handy, I thought one egg might not be enough to get the right texture. Don’t ask me how I went by my gut! And of course, it worked!!

I added a little more honey than what the actual recipe called for because the muffin batter tasted a bit bitter to my palate.

I used canola oil instead of rice bran oil.

I’m still excited about how the muffins turned out and will definitely make them again! And you should try too because the muffins have no refined flour, no sugar and an interesting way to include pumpkins in your meal/snack.

On the other news, my hometown Kangayam and its surrounding villages received maximum rainfall in the past two days. We have been having an acute water shortage for almost a year now and my dad tells me that people in town haven’t been this happier!

One volunteer group named Vergal-Kangayam took over the cleaning up of the old tanks and ponds in the town. And below is the picture of how it looks after the rains. Wish I was there to see this in person, sigh!
