Fridge Clean-up Meal Series #1

There will be days in all of our lives when work keeps us super occupied and everything else take a back seat. Last week was one of that kind and the vegetables stocked up in the fridge were crying to be used. I usually don’t use more than one or two vegetables in a meal but I had to clean up the fridge before the vegetables go rotten.So I cooked up the weekend lunch meal with whatever was left over in my fridge and not to mention that it turned to be a pretty decent.

So, the lunch was Indian flat breads with smoked brinjal curry and roasted Cauliflower and capsicum with some spices. Sounds MasterChef-y huh? It happens when you ardently follow the show. Sometimes the conversation at home is like –

Me – How is the dinner?

Husband – There isn’t enough salt in the idlis; the balance between the sweetness and the sourness is missing in the chutney and that’s why I’m afraid you will be cooking in the Pressure test (breakfast) tomorrow! πŸ˜€

I had some brinjals, cauliflower and capsicum to be used. All three don’t really go together and can’t be cooked into a single dish. So I made Baingan Bhartha and roasted the cauliflower and capsicum in the OTG. Roasting vegetables was a first to me, so I referred to know the cooking temperatures of different kinds of vegetables.

Roasted Vegetables – How to

  • Pre-heat the oven to 200 degrees.
  • Cut cauliflower and capsicum into equal sized florets and cubes.
  • In a bowl add olive oil, salt, black pepper powder, cumin powder, red chilly powder, coriander powder and garam masala. Give it a quick mix until all of them combine together.
  • Add the cut vegetables and toss them in the olive oil and masala mixture.
  • Leave it for 10 minutes.
  • In a baking tray, sprinkle some olive oil or use a butter paper and lay the vegetables.
  • Crush a few kasuri methi leaves (dried methi leaves) on top and roast it for 10-15 minutes or till the vegetables get roasted.


  • Vegetables will not be completely cooked through and will be a bit raw which is fine.
  • Feel free to add any vegetables of your choice.

I found that roasting vegetables is one of the best ways to use them up, especially when you have one or two left from different kinds left over. Do you roast vegetables? How do you do it? Would like to know more. Let me know in the comments.
